Vegan bday

Celebrated BFs bday on Sun with lunch at Pomegranate Cafe followed by Treehouse Bakery cupcakes (chocolate with cherry frosting-his favorite)! Really enjoyed both the lunch and dessert. If only birthdays came more often.

Four days ago, this rooster wandered into my yard. Now after becoming acquainted with the cats and having conned my BF into buying him chicken scratch, Henry seems to have settled down into his new home.

Labor Day Lunch!

Knowing only that this restaurant is rated high on vegguide, my sister and I went to Evergreen Restaurant for dinner on Labor Day. The restaurant itself looks very much like a cafeteria but the warm conversation and happy faces of the customers made us want to stay. After some debate, we settled on the Eggplant with Basil and Black Mushrooms and Tofu with an appetizer of the seaweed and tofu soup. The soup was very ramen-ish and enjoyable. I loved the Tofu dish (gingery and salty) while my sister loved the Eggplant (basily and garlicky). Both portions were huge and accompanied by a giant dish of white rice. I love trying new restaurants and this one has a ton of vegan/vegetarian options!

Tofurky Pizza at Last!

Last weekend, my BF was kind enough to run to Whole Foods and buy two Tofurky Pizzas.  He picked up Italian Sausage with Roasted Veggies and Pepperoni. I was ecstatic at finally being able to try their pizza!!  Pizza is definitely my weekend food of choice and I've done everything from homemade, ready-made and frozen.
I sampled (ie. mowed down on) the Pepperoni pizza Friday night.  It was crispy, sweet, garlicky and had a little tang from the pepperoni topping. Although I don't know if this beats the Whole Foods ready-made pizza, it's better than the Amy's pizza with soy cheeze.  I love having multiple options and this is a freezer ready meal.
I'm saving the Italian Sausage for this upcoming weekend... I'll let you know how it goes!

...After a long and stressful day at work, I dug the Italian Sausage pizza out of the freezer and threw it in the oven (literally).  15 minutes later (after a load of laundry and being mauled by hungry cats), I dug the pizza out of the oven and dug in.  The bottom was a great shade of charcoal and pretty much tasted like it.  The top however was flavorful and delicious. I plan on going back at the next opportunity to grab a new pizza and this time, make it right!

Job Month 2

Lately, I've been sampling Primal Jerky flavors: Hot and Spicy, Texas BBQ, Mesquite Lime, and Hickory Smoked.  Apparently I've missed out on the Teriyaki and the Thai Peanut :(  I thought it would be great to keep a supply of these in my office for the occasional snack or pick-me-up so I bought 2 of each flavor at the beginning of the month.  Reality isn't as great as imagined.  The packages are hard to open, sometimes refusing to open at all. Then when a package does open partially, your fingers are so sticky and wet from easing out the jerky that it's impossible to open the package further.  Grr... Frustrations.  Although I enjoy the Hot and Spicy flavor (it IS hot and spicy), the other flavors are just ok and generally leave me with a stomache.  I wouldn't buy the jerky again unless I was traveling and desperate but it's been a good experiment.

Ginger (in any form) has by far been the best food choice for the office. It's refreshing, good for the digestion, stimulating, lower in calories and provides a sweet pick me up for the mid-afternoon hours.  Or the I'm Starving and Can't Wait for Dinner. 

A great find that I made thanks to a Geek Girl (Geek Girls of the East Valley on Meetup.com) is Whole Foods Pizza!! They have a great thin crust pizza with your choice of whole wheat, white or gluten-free crust. You have your choice of toppings AND your choice of dairy or non-dairy cheese. Finally, a vegan pizza without paying more for the privilege of choosing a non-dairy cheese. I generally order the regular crust with mushroom, spinach and olives with the Daiya cheese.  Delicious.  These pizzas are huge and last forever. 

I can't wait to try their Mexican burritos which they make vegan by using Gardein chicken.  Again, finally vegan food without paying extra for the privilege!!

Job week 2

My second week at at the new job is going well!  I like my co-workers, I like the job, I like the patients...  I don't even mind the fact that I work 6 days a week (it's probably because the office has the A/C at 75 while home has the A/C at 90).  Because the office doesn't have a window and I desperately need color to brighten up the beige walls, I hung a picture called "The Blessing Tree" by Melissa Harris on one wall with the thought of hanging either a mirror or a window type picture on the opposite wall.

Lately, I've been eating breakfast, lunch and dinner in the office which means that my meals are invariably peanut butter sandwiches for breakfast and lunch although a new breakfast alternative I found at Whole Foods are the Food for Life gluten free english muffins.  They are really satisfying covered in Peanut Butter & Co. Dark Chocolate Peanut Butter and Tofutti cream cheese.  Although GF, they taste and stand up to any other english muffin.  Because I am used to really spicy foods, I have developed a new PB sandwich for lunch that I LOVE! On 2 slices of hearty whole grain bread, apply pb to both slices, douse liberally with hot sauce and over that, sprinkle crushed chili peppers.  Delicious and satisfying!

Weekends are a little harder because I feel deprived during the week and want to make up for it on my days off.  So far, I've concentrated on creating different homemade pizzas but I think I am pizza-d out.  Is that possible??  I am not sure what my new weekend treat will be but I think it will probably be something super simple. It's hard to get too interested in food preparation when the kitchen is so hot.

Getting started in a new job

Next Tuesday I start a new job! I am very excited to be in a new job with more responsibility and adequate compensation.  Along with my very own office, the clinic has a full size frig and even better, a freezer!!  Immediately I started thinking that I could store ice cream in there.  I have no idea why I would eat ice cream at work but just in case...

I am thinking about everything I'll need to have on hand for a mid-morning snack, lunch, afternoon snack and pre-dinner. I say all of these because my work day is 10 hours long and I definitely need sustenance for that time period.  I've never had an office that's exclusively mine so it'll be wonderful to bring in all of my supplements, teas, foods and not worry if I forget something.  Larabars for those hungry moments, soy crisps for the snacky moments, and fruit for the inbetween nutritious moments.

The lunch hour will be 2 hours long so while I'll eat in most days, other days I will want to get out of the office.  It's a bonus that the clinic is located in the campus area so there are plenty of vegan restaurants and natural food stores within several miles.
YAY for new jobs!!
